Ingredients

  • Cooked frozen shrimp, thawed

  • Cooked rice

  • Black beans, cooked and warmed

  • Mango, diced

  • Avocado, sliced or diced

  • Flour tortillas

  • Butter

  • Garlic salt, to taste

  • Lemon pepper, to taste

  • Cilantro-Lime Greek Yogurt Sauce

  • Optional: cooked mixed vegetables, such as lima beans, peas, and carrots

  • Optional: fresh lime, for serving

  • Optional: hot sauce or chili powder, for heat

Method

  1. Warm the shrimp.
    Melt a little butter in a skillet over medium-low heat. Add the garlic salt and lemon pepper, then add the thawed cooked shrimp. Warm gently, being careful not to overcook them.

  2. Add the vegetables and mango.
    Add a small amount of cooked or frozen mixed vegetables and the diced mango to the skillet. Warm until everything is heated through and the mango is just beginning to soften. The vegetables are optional—the shrimp, mango, and avocado are the heart of this burrito.

  3. Warm the beans.
    Heat the black beans separately until warm.

  4. Prepare the shrimp.
    Remove the shrimp tails and cut the shrimp into bite-sized pieces.

  5. Warm the tortilla.
    Heat a flour tortilla briefly until soft and pliable.

  6. Build your burrito.
    Layer the ingredients down the center of the tortilla:

    • Rice

    • Warm black beans

    • Bite-sized shrimp

    • Mango and vegetables

    • Fresh avocado

    • A generous drizzle of cilantro-lime sauce

  7. Roll it up.
    Fold in the sides, roll tightly, and enjoy while warm.
