π Fresh Garden Tomato Sauce
When the garden gives you an abundance of ripe tomatoes, this simple sauce captures the warmth of summer and turns it into something you can enjoy all year long. Fresh, bright, and made with love, this is a reminder that everyday cooking can become a small ritual of nourishment
Ingredients
Ripe tomatoes
1 chopped onion
3β4 cloves garlic
2 tbsp olive oil
1 tsp salt
Basil or Italian seasoning
(Optional) tomato paste if too watery
Method
Place whole tomatoes in a large shallow pan.
Add ~Β½ inch water.
Cover and steam 10β15 minutes until skins split.
Cool slightly, peel skins, remove cores.
Blend until smooth.
Pour into a pot.
Add onion, garlic, olive oil, salt, herbs.
Simmer 45β90 minutes until thick.
Notes
Longer simmer = richer sauce
Freeze in portions for later use
Fresh tomatoes give a naturally sweeter flavor
