🥒 Zucchini Fritters

Transform fresh zucchini into golden, savory fritters with crisp edges and a tender center. This simple recipe is a delicious way to celebrate the garden’s abundance, turning a humble harvest into something warm, nourishing, and full of homemade goodness.

Ingredients

  • 2 cups shredded zucchini

  • 1 large egg

  • ¼–⅓ cup all-purpose flour

  • ¼ cup grated Parmesan cheese, optional

  • 1–2 cloves garlic, minced

  • 2–3 tablespoons chopped green onion or finely diced onion, optional

  • ½ teaspoon Italian seasoning or dill, optional

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Olive oil for frying

Method

1. Squeeze the zucchini

Place the shredded zucchini in a clean kitchen towel or several layers of paper towels. Squeeze firmly to remove as much moisture as possible. This is the secret to crispy fritters!

2. Make the batter

Add the zucchini, egg, flour, Parmesan, garlic, onion, seasonings, salt, and pepper to a medium bowl.

Stir until everything is well combined. The mixture should hold together when scooped. If it seems too wet, add another tablespoon or two of flour.

3. Cook the fritters

Heat a thin layer of olive oil in a skillet over medium heat.

Scoop about 2 tablespoons of the mixture into the pan for each fritter. Gently flatten with the back of a spoon or spatula.

Cook for about 3–4 minutes on the first side, then flip and cook another 2–3 minutes, until golden brown and crisp.

Transfer to a paper towel-lined plate to absorb any excess oil.

Serve warm with your favorite sauce or dressing.

  • Serving: Delicious with Creamy Cilantro Lime Greek Yogurt Sauce, sour cream, tzatziki, or a squeeze of fresh lemon.

  • Garden topping: Try topping the fritters with diced fresh tomatoes, garlic, olive oil, basil or parsley, salt, and pepper.

  • Variations: Add fresh herbs, a little shredded cheddar, red pepper flakes, or finely chopped green onion.

  • Storage: Refrigerate leftovers in an airtight container for up to 4 days.

  • Freezing: Cool completely, then freeze in a single layer before transferring to a freezer-safe bag.

  • Reheating: Reheat in a 375°F oven for 10–15 minutes or in an air fryer at 350°F for 5–7 minutes to bring back the crispness.
