Ingredients

For the Sandwiches

  • 1 ribeye steak, about ¾-inch thick

  • 2 crunchy sandwich rolls, such as Dutch Crunch or similar

  • Garlic powder, optional

  • 1 packet prepared au jus mix

  • 2–3 Yukon Gold or red potatoes

Method

  1. Prepare the potatoes.
    Preheat the oven to 425°F. Slice the potatoes into wedges or thick fries. Toss with olive oil, salt, pepper, garlic powder, and paprika if using.

  2. Roast the fries.
    Spread the potatoes on a parchment-lined baking sheet in a single layer. Roast until golden brown and crispy, turning once halfway through cooking.

  3. Season the ribeye.
    While the potatoes roast, season the ribeye generously with salt, pepper, and a little garlic powder if desired.

  4. Sear the steak.
    Heat a skillet over medium-high heat. Add a little oil if needed, then sear the ribeye for about 2½–3 minutes per side, depending on your preferred doneness.

  5. Let the steak rest.
    Transfer the steak to a cutting board and let it rest for 5 minutes. Slice thinly against the grain.

  6. Prepare the au jus.
    Prepare the au jus according to the package directions and keep warm.

  7. Build the sandwiches.
    Slice the rolls open and layer with the thinly sliced ribeye and Swiss cheese.

  8. Melt the cheese.
    Place the sandwiches under the broiler just until the cheese is melted and bubbly and the rolls are lightly toasted.

  9. Serve.
